Sweet & Spicy Crock Pot Roast

Servings: 4-6

Ingredients

1 - Beef Roast (about 3 pounds)...boneless chuck or 7 bone roast
12 - gingersnap cookies, grounded
1 - Cup favorite Sake to Me Marinade (Original or Hottie) I used Hottie
1 - large onion, peeled and sliced
4 - peeled carrots and some mushrooms....if desired
2 - large potatoes, quartered....if desired

Directions

1. Coat crock pot with cooking spray and put _ cup of your favorite Sake to Me Marinade on bottom of pot.
2. Place a small amount of oil in skillet and quickly brown flour-coated roast on both sides. Place in crock pot.
3. Splash a little of the remainder _ cup of your favorite Sake to Me Marinade over top of meat and place grounded cookies on top.
4. Now that grounded cookies are on top, add the remainder of marinade over cookies slowly to soak in. Add onions on top.
5. Cover and cook on Low 7-8 hours till fork tender. (Depends on thickness of roast).
6. Add carrots, mushrooms, and potatoes the last 3-4 hours. (Spoon liquid over top of raw vegetables to coat.
7. Lift beef and vegetables on to a platter and serve with gravy spooned over them and Enjoy! *Serve with cole slaw, or tossed green salad.  HINT: No Peeking! When crock pot cooking, avoid lifting the lid as it will add the need for additional cooking time.
